Our cheesemaker’s day begins when the morning’s fresh milk is piped into a large vat, where it is gently warmed and allowed to ripen. Rennet is added to produce a firm smooth curd which is transferred into moulds, pressed and turned at intervals. It is then salted in brine, dried and placed in our cheese maturing room for a minimum of 2 months. Burren Gold has a firm texture and a unique creamy taste. In addition to Natural and Smoked, Burren Gold is also available in the following flavours: Fenugreek, Cumin, Black Pepper, Garlic and Nettle and Piri Piri.
The Farmshop is also renowned for its homemade fudge. There is a wide range of flavours available, including Caramel Rum Raisin, Chocolate Honeycomb, Mint Chocolate Swirl, Irish Cream, Irish Whiskey Hazelnut to name but a few! Why not drop in and sample this delicious smooth and creamy fudge or have some with a cup of freshly ground coffee while relaxing in the peaceful surrounds of Aillwee Mountain.
Over the last few years, the artisan food industry has developed very strongly in Ireland and the Farmshop at Aillwee Cave is part of that wave. We have recently been accepted as members of Good Food Ireland. We have carefully sourced and chosen a wide range of local and Irish products which includes jams, chutneys, relishes, chocolate, rapeseed oil, fruit wine, biscuits and much much more.
